Easy Potato Cakes

Ingredients:

Directions:

  1. Pre-heat oven to 200 degrees.
  2. Mix mashed potatoes, onions, eggs, pepper and baking mix well.  Heat a non-stick skillet over medium-high heat.  Add oil or spray skillet with cooking spray.
  3. Drop potato mixture by 1/4 cup measures into the heated pan, do not overcrowd.
  4. Cook for 2 – 3 minutes or until lightly browned, flip potato cakes and brown other side.
  5. You can store potato cakes in a 200 degree oven while finishing the remaining batter.
  6. Serve with Cranapple Sauce.

Yield: Serves 4. Makes 12 pancakes.
