Easy Potato Cakes
Ingredients:
- 2 cups Reser’s Mashed Potatoes or leftover mashed potatoes
- 1/4 cup (about 6) green onions, chopped fine
- 3 large eggs, beaten
- 1/2 tsp pepper
- 1/2 cup Buttermilk Baking Mix (Bisquick)
- 1 Tbsp cooking oil
- 1 cup cranberry orange relish
Directions:
- Pre-heat oven to 200 degrees.
- Mix mashed potatoes, onions, eggs, pepper and baking mix well. Heat a non-stick skillet over medium-high heat. Add oil or spray skillet with cooking spray.
- Drop potato mixture by 1/4 cup measures into the heated pan, do not overcrowd.
- Cook for 2 – 3 minutes or until lightly browned, flip potato cakes and brown other side.
- You can store potato cakes in a 200 degree oven while finishing the remaining batter.
- Serve with Cranapple Sauce.
Yield: Serves 4. Makes 12 pancakes.
