Ingredients:
2/3 cup butter
2/3 cup flour
7 cups milk
2-18oz. packages Reser's Potato Express Diced Potatoes
4 green onions, thinly sliced
12 strips bacon, cooked, drained, and crumbled
1 cup shredded cheddar cheese
1 cup sour cream
Salt and Pepper to taste
Preparation:
Melt butter in a large pot over low heat. Stir in flour until smooth and bubbly.
Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes
and onions. Reduce heat, simmer gently for 30 minutes. Add remaining ingredients.
Use potato masher to mix ingredients until cheese is melted and ingredients are
combined. Garnish with fresh green onions.
Yield: 6 to 8 servings
