Stuffed Bell Peppers with Mashed Potatoes

Ingredients:

Directions:

  1. Preheat oven to 400°F
  2. Brown ground beef in a medium skillet, drain
  3. In a large mixing bowl, combine mashed potatoes, cooked beef, juice, salt, pepper, vegetables, tomatoes
  4. Arrange 8 half-peppers upright on a baking sheet
  5. Fill peppers with mixture
  6. Bake in 400°F oven for 30 minutes until peppers are tender
  7. Sprinkle tops with cheddar cheese
  8. Bake for 5 more minutes or until cheese melts

Yield: Serves a party of 8 or more
