Stuffed Bell Peppers with Mashed Potatoes
Ingredients:
- 24 oz. Reser’s Sensational Sides prepared mashed potatoes
- 1-1/3 lbs. lean ground beef (substitute ground poultry if desired)
- ¼ c. crispy onions (canned)
- 6 T fresh lemon juice
- 1.5 tsp. salt
- ¾ tsp. ground pepper
- ½ c. fresh finely chopped vegetables (parsley, green onion, zucchini; equal amounts)
- 15 oz. can diced tomatoes, drained
- Saffron for color (optional)
- 1/3 c. medium cheddar cheese
- 4 medium-sized fresh bell peppers, cut in half to form bowl shape (remove seeds and core)
Directions:
- Preheat oven to 400°F
- Brown ground beef in a medium skillet, drain
- In a large mixing bowl, combine mashed potatoes, cooked beef, juice, salt, pepper, vegetables, tomatoes
- Arrange 8 half-peppers upright on a baking sheet
- Fill peppers with mixture
- Bake in 400°F oven for 30 minutes until peppers are tender
- Sprinkle tops with cheddar cheese
- Bake for 5 more minutes or until cheese melts
Yield: Serves a party of 8 or more
