Potato Souffle with Cheese

You will need 12 – 4 oz ramekins or you can substitute one medium baking dish if desired.

Ingredients:

Directions:

  1. Preheat oven to 375°F
  2. Brush insides of ramekins with melted butter and set aside
  3. In a large mixing bowl with a rubber spatula fold in the beaten eggs into mashed potatoes to combine
  4. Fill ramekins with potato mixture, then place a square of cheese into each of the filled ramekins
  5. Level off potatoes with spatula
  6. Brush tops with remaining melted butter; place completed ramekins on a baking sheet
  7. Bake at 375°F for 30 minutes or until golden brown

Serves a party of 6-12
