Potato Souffle with Cheese
You will need 12 – 4 oz ramekins or you can substitute one medium baking dish if desired.
Ingredients:
- 48 oz. Reser’s Sensational Sides prepared mashed potatoes
- 3 large eggs, lightly beaten
- 8 oz. Camembert cheese (or other soft ripe cheese) cut into 1 inch squares
- 4 T (1/2 stick) butter, melted
Directions:
- Preheat oven to 375°F
- Brush insides of ramekins with melted butter and set aside
- In a large mixing bowl with a rubber spatula fold in the beaten eggs into mashed potatoes to combine
- Fill ramekins with potato mixture, then place a square of cheese into each of the filled ramekins
- Level off potatoes with spatula
- Brush tops with remaining melted butter; place completed ramekins on a baking sheet
- Bake at 375°F for 30 minutes or until golden brown
