3 Steps for Safer Holiday Entertaining

Food is often left out for extended periods of time for guests to graze on. As a result food-borne bacteria can quickly multiply, spoiling food and increasing the risk of food poisoning.

Follow these 3 rules:

  1. Observe the 2-hour rule. Any food left out for more than two hours (not just the meat!) is susceptible to harmful bacterial growth and should not be eaten.
  2. Serve appetizers in smaller portions. This is especially important for dips and other refrigerated items. An added bonus: refilling your dip bowls more frequently will give you a chance to mingle and interact with your guests.
  3. Divide leftovers into small portions. This enables faster cooling and more efficient storage. Plus, it’s easier to send goodie bags home with guests.
